Gourmet Cream of Broccoli Soup

The spoon test - it's THAT thick and lovely!Broccoli was on sale this week and so I decided to try my hand at making this creamy and delicious soup, perfect for cool autumn evenings. I cut down on the cooking time by steaming the broccoli in GLAD SimplyCooking microwave steam bags beforehand and also used 3/4 of the stems. Very tasty recipe, nice thick but not too thick consistency as you can see by my trusty wooden spoon test.

Prep Time: 15 minutes
Cook Time: 30 minutes

Serves: 2-3

Ingredients:

 

  • 2 c. of fresh chopped broccoli
  • 1 1/2 c. of chicken broth
  • 1/4 tsp. of salt
  • ground black pepper to taste
  • 1/2 c. of heavy whipping cream
  • 2 tbsp. of butter
  • 1 thinly sliced onion
  • 1 thinly sliced small potatoes

Directions:

 

  1. Add some butter to a pan on a medium flame.
  2. Add in vegetables, stirring for a minute.
  3. Next cover with lid (sweating the veggies).
  4. After add chicken stock, letting this come to a soft boil.
  5. When veggies are tender, place them in a processor and puree.
  6. Once you are done pureeing the mixture, put back in pan and add cream.
  7. Salt and pepper to your individual taste.
  8. Serve warm.

Sensational Chicken Noodle Soup

Having recently discovered the endless recipe database at CampbellsKitchen.com I couldn’t resist but test drive a few. My first trial was the Sensational Chicken Noodle Soup. It was indeed quick and easy, and tasted great. Great to keep in the freezer for the cold Montreal winters or when the inevitable flu season hits.

Prep/Cook Time: 25 minutes

Serves: 4

Ingredients:

3 1/2 cups Chicken Broth
Generous dash ground black pepper
1 medium carrot, sliced
1 stalk celery, sliced
1/2 cup uncooked extra wide egg noodles
1 cup shredded cooked chicken

Directions:

1. Heat broth, pepper, carrot and celery in 2-qt. saucepan over medium-high heat to a boil.
2. Stir in noodles and chicken. Reduce heat to medium. Cook for 10 min. or until noodles are tender.
